Family Tradition

When my kids were born I set up an email account for each of them. I email them most every week. I provide them a recap of what that the week held. Sometimes I send them an email when something special or unusual occurred. I sometimes use it to vent when they are driving me crazy. When they are old enough I will give them access to their accounts. Right now I think 16 will be the magic age. Another thing I have started in the last few years is to write them an annual “Year in Review”. This is a quick snapshot of what we did over the past year. It has where we traveled, museums and adventures, school milestones and other family facts. We discuss it on January 1st and it is stored in their Baby Portfolio. What fun tradition can you start with your family?

Body Back Chicken Caprese

Chicken Caprese

Serves 4 // Serving Size 1 Chicken Breast

Ingredients

4 (4oz) boneless skinless chicken breasts

½ C whole-wheat bread crumbs

2 Tbsp garlic powder

2 egg whites

1 tomato, sliced

1 ball fresh mozzarella, sliced

12 fresh basil leaves, chopped

Balsamic vinegar to taste

Directions:

Heat oven to 350 degrees. Mix together breadcrumbs and garlic powder in a shallow bowl. Whisk egg whites in another shallow bowl. Pound chicken breasts thin with a mallet. Coat chicken in egg whites and then dredge in bread crumb mixture. Spray baking dish with nonstick cooking spray and place chicken in dish. Bake for 25 minutes or until cooked though. Top with tomato and cheese and basil leaves. Sprinkle with balsamic vinegar to taste.
